Fish and Chips






A while ago I really wanted to eat the british style fish and chips so I made the fish with this recipe. The key to making crispy fish is chilled water used for dipping.



Ingredients

  • 1 teaspoon lemon juice
  • Canola oil for deep fryer
  • 2 pounds fresh cod
  • 2 cups of water
  • 2 cups flour (plus a little extra for dredging)
  • 4 teaspoons vinegar
  • 1 teaspoon baking powder
  • Salt and pepper and turmeric according to taste

Directions

Mix the vinegar, baking powder, flour, turmeric, salt and pepper in a bowl. Slowly add the water and beat with a whisk until the batter is smooth and the proper consistency. Dredge fish in flour then dip into the batter. Fry at 350 degrees Fahrenheit until golden brown (about 5 minutes).
