Khaja Aloo




This recipe is taken from Punjabi Cooking book and it is deeeeeeeeeeeeeeeeeeeeelicious. If you don't believe it, then try it yourself. This is one great recipe for aloo lovers :)

Ingredients:

4 potatoes
1 tsp zeera
1 bayleaf
1 onion chopped
1/4 tsp turmeric
1/2 tsp garam masala
2 tbsp chopped coriander
1/2 cup yogurt
1/2 tsp chilli powder
oil

grind to paste:
4 tbsp cashews
1 tbsp chopped ginger
1 tsp chopped garlic

Method:

Cut the potatoes and fry them to a deep golden brown texture and keep aside. Grind cashews, ginger and garlic and keep them aside as well. Heat 4 tbsp oil and then add zeera and bay leaf. Then add onions, haldi and garam masala. Add yogurt, cashew paste and add 1/2 cup of water. Add the fried potatoes and coriander leaves and simmer it on low heat. Cook on low heat till gravy thickens. Serve with roti or paratha. (Due to the cashews being added, the gravy will turn into a dryer paste over time and will make the subzi dry, so, this subzi is on the dryer side)
