Bihari Kabab






Few moons ago my mommy used to use Shan Masala and other packet masalas that used to give me heart burns due to the masalas used in them. I then searched, read few masala packets and combined few recipes to make my own Bihari Kabab masala. You can grind it and keep it aside for future use.

For bihari kabab you'll need thin beef pasandas.

These are totally melt in your mouth beef slices. Papaya and Mustard Oil is the key to bihari kababs.

So, first the masala:

you can increase the quantities to make a bigger batch.

2 tsp red chillies,
1 tsp coriander seeds,
1 tsp salt,
1 tsp shahi zeera
1/2 tsp dried ginger powder
1/2 tsp dried garlic powder
1 tsp zeera
1 inch cinnamon
1 tsp black pepper
1 tsp clove
4 bay leaves
1 tsp kalonji
1 tsp saunf
1/2 tsp javitri powder
1/2 tsp sesame seeds
1 tsp amchoor powder
1/2 tsp khush khush

Grind the ingredients together.

Bihari Kabab Recipe:

1 pound pasanda (beef slices)
2 tsp yogurt
1 cube ginger garlic
4 cube papaya
2 tbsp mustard oil
1 tsp salt
2 tsp bihari kabab masala (or more depending on your spice level)
1/2 tsp red chilli powder

Mix all the ingredient together and marinate for few hours. Put them on a skewer and grill. Serve it with green chutney, kachoomar and paratha. Behari Kabab combination is with seekh kabab, boti kabab and chicken tikka.
