Besan Wali Bhindi




This recipe is taken from Taste of Rajasthan, a cookbook with vegetarian recipes.

200gms bhindi (okra)
2 tsp besan
1 tsp each- amchoor, dhania powder
1 tsp each- zeera powder, garam masala, salt
1.5 tsp saunf- according to taste
1/2 tsp haldi powder
red chilli to taste
1/2 tsp kalonji
4 tbsp oil

1. Wash dry bhindi. Cut off the head and tail. Give a long slit on one side.
2. Mix together 1 tsp saunf and all other dry masalas (except kalonji and 1/2 tsp saunf) and besan. Add 1 tbsp of oil to it. Mix well.
3. Stuff this masala into the bhindi.
4. Heat 3 tbsp oil. Add saunf and kalonji. Fry for 1-2 minutes.
5. Add bhindi. Fry for 2-3 minutes. Lower heat. Cover and cook stirring occasionally till bhindi is cooked. Remove the cover and cook further till bhindi turns crisp. Serve hot.
