Stir fried thai chicken with cashew nuts


200 gms chicken boneless- cut into small strips
1/2 tsp salt and 1/2 tsp peppercorns crushed
1 spring onion
2 tbsp oil
1 tbsp chopped garlic
1 inch pieces ginger chopped
1/2 tsp sugar
1/2 - 1 tbsp soy sauce
1/2 green and 1/2 red capsicum
1/2 cup roasted cashewnuts
4 fresh red chillies slit lengthwise

Heat oil in a pan. Fry garlic and white part of onion till onion turns light brown
Add ginger. Stir.
Add chicken, slat and fresh ground pepper. Fry for 4-5 minutes.
Reduce heat. Add sugar, soy sauce, green and red capsicums, cashewnuts and red chillies. Saute for 1-2 minutes. Serve Hot.
