Chicken Do Piaza
Taken in the literal meanings, chicken do piaza means chicken cooked with two onions. But chicken with lots of onions is called "chicken do piaza". Just like any other recipe, they come in all different variations.
Ingredients:-
Chicken boneless breast(1/2 kg),
Onion, (thinly chopped 1 kg),
Tomatoes , diced (100 gm),
Cardamom (1),
Cinnamon (2),
Ghee (3 tbsp),
Ginger 1″,
Curd (1/4 cup),
Garlic (15 flakes),
Chili powder (2 tsp),
Turmeric powder (1/2 tsp),
Handful of coriander leaves,
Cloves (2),
Bay leaves (2),
Salt,
Water (1/2 cup)
Take the chicken and wash it properly. Pat dry it and cut in into small pieces. Make the paste of ginger and garlic and marinate the chicken into this paste for at least 30 minutes. Now heat the ghee in the skillet and add onions. Fry them until they are golden brown. Now add bay leaves, cinnamon, cloves and cardamom and cook it for 1 minute. Now add tomatoes, chili and turmeric powder and cook until the tomatoes are fully cooked and tender. Now add the chicken in the skillet and ½ cup water. Now add beaten curd and cook on a slow heat until the chicken is properly cooked. Remove from the heat and sprinkle coriander leaves. Serve it with roti or naan.

Note: I usually take out all the bay leaves, cinnamon and spices at the end of cooking as I don't like garam masalas floating around and coming in the mouth.
