Sweet and Sour Chicken
Sweet and Sour Chicken
1 pound boneless chicken preferrably breast
1 egg white
oil for frying
3 tbsp cornstarch
1/4 cup fresh pineapple (or canned)
pineapple juice 3-4 tbsp
1 tbsp vegetable oil
1/2 green pepper
1 chicken cube for chicken stock
1 tbsp vinegar
2 tbsp soy sauce
water as per requirement
Slice chicken breast strips lengthwise in narrow strips. In a wok or deep heat oil. In a small bowl beat egg and add 2 tbsp of cornstarch. Dip chicken strips in that mixture and fry. Keep the fried chicken strips aside. Add the 1 tbsp oil to the wok, then add green pepper, chicken stock cube, pineapple and pineapple juice. Then add a bit of water, soy sauce and vinegar. Let it simmer for 3-4 minutes. Then add the chicken strips to it. Lastly add the left over corn starch and keep stirring until the mixture thickens. Serve hot over rice or chowmein.
