Haryali Paneer Tikka (Green Cottage cheese cubes)
When I am thinking about a dinner, I always try to make something vegetarian keeping in view my husband and other vegetarians. This recipe is low in fat and is very healthy. This recipe is taken from Nita Mehta's book called 'The Best of Chicken and Paneer' and has been changed a bit.
400 gm paneer (indian cottage cheese)- cut into square/ rectangular pieces
1 green bell pepper (shimla mirch)
1 red bell pepper
4 tbsp besan (gram flour)
4 tbsp oil
Grind to paste
1 cup green coriander
2 tsp fennel seed (saunf)
1 tsp ginger garlic paste
3 tbsp lemon juice
1/2 tsp salt
Grind the paste. Then cover the paneer and bell pepper with the grinded mix. Then add oil and besan and let it marinate for 2 hours or more. Try using a fork and poke the paneer and vegetables a bit so that the marinate can penetrate the cubes. Put the paneer and skewers and bake until golden brown. Take them out of the skewers when serving. Serve with chutney or other food as a side dish.
