Ras Malai
I am always looking to utilize ingredients on hand and this time I wanted to use powdered milk so I made Ras Malai. This recipe makes about 12-15 ras malai.
Ingredients:
1 cup powdered milk
3 cup milk
4 tbsp sugar (or according to your taste)
1 tbsp oil
1 egg
1/4 tsp baking powder
drops of cardamom essence (optional or use cardamoms)
Pistachios
Start boiling the milk with the essence and sugar and pistachios.
Next mix powdered milk, oil, baking powder and egg. Mix it thoroughly to form a dough. Make small balls and flatten them out.
Quickly add the flatten balls into the boiling milk. Reduce the heat to medium and let it cook for 10-15 minutes. Turn them 2 or 3 times to let the milk soak in. (Here's a tip for softer middles- poke the ras malai with a knife in the middle so the liquid milk can soak in). Refrigerate the ras malai before serving. You can even use freezer if you are in a rush and want to serve them quickly.
